But also very suitable on bread, as a snack on a cracker or as part of a Mexican meal. Whichever way addictively delicious!<\/h6>\n\n\n\n<p>I came up with this salsa when I was looking for a good dip to accompany a Mexican themed bbq. Years later, this dip has become so popular with friends that I do not dare to leave it out. Once I tried, but confused questions soon raised \u2018where is the coriander dip?!\u2019 The fresh taste of the coriander combines lovely with the sweet, almost creamy taste of the cashews. The cumin, garlic and chilli add a great kick.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Ingredients:<\/strong><\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 teaspoon cumin seeds<\/li>\n\n\n\n<li>Handful unsalted cashews<\/li>\n\n\n\n<li>A large bunch of fresh coriander<\/li>\n\n\n\n<li>1 green chilli (optional)<\/li>\n\n\n\n<li>2 cloves of garlic<\/li>\n\n\n\n<li>2 generous tb spoons of good quality olive oil<\/li>\n\n\n\n<li>1-2 limes (depending on the amount of juice)<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n<\/ul>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Preparation:<\/strong><\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Toast the cumin seeds until you smell the aroma.<\/li>\n\n\n\n<li>Next toast the cashews until lightly browned.<\/li>\n\n\n\n<li>Chop the chili, garlic and coriander (leaves and stalks!) in big chunks.<\/li>\n\n\n\n<li>Process all the ingredients above with a hand mixer, together with the olive oil, lime juice and salt and pepper.<\/li>\n\n\n\n<li>Decide how thick you want this dip to be; add more oil if necessary.<\/li>\n<\/ul>\n\n\n\n<p><em>Goes very well with bread, as a snack on a cracker or as a dip with a Mexican meal\u2026 Or basically with anything else you like!<\/em><\/p>","protected":false},"excerpt":{"rendered":"<p>A lovely fresh coriander dip with the sweet taste of cashews and a bite of cumin that works very well with bbq\u2019s!
